I had this a long time ago at a place in Marin county. You don't boil it but the brass cup is placed over the heat until the water is hot enough to bump. This is just shy of boiling. The waiter took it out of the heat and let it cool then put it back over the fire two more times. The waiter was very efficient in the preparation serving six cups in rapid succession by heating one while the others cooled. Sadly four of the six people in our group whinged about the coffee being too strong and wouldn't drink it. I went back to the office and got two days work done before quitting time.

I like espresso straight, I get the same complaint.

I've had a couple of CYT who worked in the coffee shop ask me how I could drink espresso. One was amusing because at fifteen she pulled better espresso than her coworkers. Espresso overpowered her senses so she didn't drink it but understood how to identify a good espresso by appearance.

I just did the math. She would be pushing forty now. Excuse me. I need to go take my Geritol.

What did you tell them?

I tell people everything else taste watered down.

I tell them it's an acquired taste. I have found Espresso not good for socializing because you finish an espresso too fast and I really don't want several of them so when I'm with a group I order cappuccino.
